Made with just 3 ingredients, these delicious snacks offer a quick source of nutrients that support blood sugar stability and deliver a well-rounded sense of satisfaction.

Ingredients

  • 1 cup dark chocolate chips (70% cocoa or higher)
  • ½ cup pomegranate arils
  • ⅓ cup + 1 tablespoon chopped pistachios

Instructions

  1. Melt the chocolate in a microwave-safe bowl until smooth, stirring every 30 seconds.
  2. Mix in pomegranate arils and 1/3 cup pistachios until evenly coated.
  3. Scoop into clusters (about 1 tablespoon each) onto a parchment-lined baking sheet, spacing them slightly apart. Top each cluster with remaining pistachios as a garnish.
  4. Chill in the fridge for 20-30 minutes, or until clusters are firm.
  5. Store in an airtight container in the fridge for up to a week, or in the freezer for up to 3 months.
